The days are getting shorter, the breeze colder, the mist heavier... but despite the abrupt change from summer to autumn we had to experience in the last couple of days, I am looking forward to this colorful and beautiful next season..
To welcome this time of the year, I cooked a nice pumpkin soup for my family...one of the most typical dishes of fall...
Here the needed ingredients:
1 butternut squash (about 500gr)
1-2 garlic cloves
1-2 freshly squeezed oranges
1-2 Liters vegetable bouillon
Salt, Pepper and if you like a hint of mild curry powder.
Cut the garlic, leek, potatoes and the pumpkin and sauté it in a bit of olive oil until everything is soft and golden.
Squeeze the orange juice and deglaze the vegetable mix. Add the bouillon and let it simmer for about 1-2 hours.
As a little tarte extra, I baked parmesan-chips...
Place some parmesan cheese on a tray and grill it in the oven, until golden. Always keep an eye on your parmesan-chips, as they are ready very quickly!
When the soup is finished, mix it well, so that no chunks are left in the soup. Season it with salt, pepper and a pinch of mild curry...
A couple of drops of heavy cream and a drizzle of pumpkin seeds oil makes this soup a wonderfully yummie fall dish...
